Q&A with Clayton from Bergen

At Dine Darling Downs we love catching up with the people behind our vibrant hospitality scene.  Our latest Q&A is with Clayton Costigan, head Chef and owner at one of Toowoomba’s most popular restaurants Bergen. If you have been to Bergen, you would know Clayton has a passion for simple excellence in cuisine, and fresh seasonal produce on every plate!

When did you realise you had a passion for cooking?

After spending time in South America as a 16-year-old.
Living over there and seeing all the different types of food, tastes, and ways of cooking and preparing food got me interested in food.

How long have you been a Chef for?

I have been a chef from the age of 18, so 31 years now.

What is your favourite dish to cook?

I enjoy cooking many things, meats, seafood and vegetables, but I would have to say scallops are my favourite food to cook.
We have a scallop, chorizo and serrano entree dish on the menu at the moment at Bergen, it’s delicious. I find the rich, sweetness of scallops a wonderful thing. In the shell, seared in a pan, or served as sashimi. They are a real winner every time!

Best recent dining experience you have had?

I was in Tasmania at Christmas and went to Ogee with friends.
It’s a wonderful little restaurant, amazing food and wine. It was just sublime, as are many venues in Hobart.

Why Toowoomba?

We came up from Brisbane to work thinking it might be for a short time. That was 23 years ago. To be honest we have never looked at leaving. It’s such a great city with fantastic people, and plenty to do and see.
It’s a fantastic and supportive community.
It’s a short trip to Brisbane and the coastal beaches if you want a short break.
I have to say it’s always nice to come back up the range though, it’s home.
