The Best Muffins Ever!

Is this the best Muffin recipe ever?

A hearty and delicious muffin is great for breakfast and the perfect addition to lunch boxes too. This recipe is bought to you by our guest contributor Linda Lester, a fabulous cook who also happens to be the Marketing Manager for the Toowoomba Farmers Market.

It’s a twist on the popular ABC (apple, banana and carrot) muffins, with the addition of avocado instead of butter or oil, dates that add a beautiful caramel burst, and honey instead of sugar.  

Easy and tasty, they’re a winning combo!  And the best part is, all the ingredients were sourced from the Toowoomba Farmers market.  Open every Saturday morning, beside the Cobb & Co Museum in Lindsay St Toowoomba.

A+BCD Muffins

Ingredients

2 medium apples (can peel to make them easier to grate)
1 large ripe avocado (or 1.5-2 small ones)
2 small ripe bananas
2 medium carrots (no need to peel unless you prefer to) 100g pitted dates (or nuts, blueberries, sultanas or chocolate chips)
1/2 cup honey
2 eggs
2 teaspoons of cinnamon (Chinese five spice – trust me! – or nutmeg are also delicious)
1 cup of rolled oats (plus a little extra to sprinkle on top of muffins)
1.5 cups plain flour
2 teaspoons of baking powder
1/2 teaspoon bicarbonate soda
Cinnamon sugar (optional) 

Preparation

Preheat the oven to 180 degrees C (fan forced) and grease a 12-cup muffin tray or line with muffin cases.

Finely grate the apples and carrots and set aside. Chop the dates into small pieces.

Mash the bananas and avocados together until smooth and add the honey, eggs and cinnamon and mix until well combined. You can use a food processor or stick blender for this stage.

Transfer to a larger bowl if needed and add the oats, flour, grated carrots, apples and chopped dates. Use a spatula or fork to lightly mix until just combined. Be careful not to over mix. 

Spoon the mixture evenly into the prepared muffin tray.

Sprinkle each muffin with some extra oats and a little cinnamon sugar (optional).

Place into heated oven and cook for 20 – 30 minutes (test after 20 minutes by inserting a skewer). Cook for longer if needed.

Cool on a wire rack.

Storage
Note they are meant to be quite a moist muffin.
Store in an airtight container at room temperature for up to 3 days or in the fridge for around 5 days (especially if it’s humid). Also freezer friendly!
