Caramel Pods Recipe

We absolutely love a good caramel filled snack! 

Especially when they are made using Toowoomba based GF Oats Australia.  We call a chance to give a shout out to an amazing local business and eat sweets a win win!!

INGREDIENTS: 

BASE: 

•    1/2 cup of cashews
•    1/2 cup GF Traditional Oats 
•    1 Tblspn cacao powder
•    2 Tblspn maple syrup
•    1/2 cup dates soaked in hot water first
•    1 Tblspn of water
•    1 Tblspn vegan butter

CARAMEL:

•    1 tin of unsweetened coconut condensed milk
•    1 tsp almond butter 
•    1/4 cup unsalted butter
•    2 Tblspn coconut sugar
•    2 Tblspn date maple syrup

TOPPING:

•    50 g dark chocolate (Or you can use Our Dairy Free Chocolate Chips)
•    1/2 tsp coconut oil

METHOD:

  1. Pulse the base ingredients together and press into cheesecake molds OR muffin tins in a bowl-like shape. Freeze for 1-2 hours.
    *Make sure you press the base up around the edges to form a dish to create the “pod” effect.*
  2. Whilst the base is freezing, make the caramel.
    Add the caramel ingredients to a saucepan over low-medium heat and gently stir.
    Bring to a soft boil and cook until it thickens slightly.
  3. Leave to cool for 20 minutes.
